Lamb Suqaar

Delicious sauteed lamb cubes with vegetables.

Ingredients:

  • 1 lb lamb, cubed
  • 1 onion, chopped
  • 1 tomato, chopped
  • 2 clove of garlic, minced
  • 1 green onion, chopped
  • ½ green pepper, chopped
  • 2 tablespoons lemon juice
  • 1 teaspoon coriander powder
  • 1 tablespoon cilantro, chopped
  • 1 green chilli
  • 1 teaspoon worcestershire sauce
  • Salt and pepper to taste

Directions:

  • On a skillet brown the meat with oil on high heat, pour worcestershire sauce over, season with salt and pepper.
  • Stir the onions until soft, add green chili, tomato, green onion, garlic, green pepper, coriander, lemon, and cilantro.
  • Continue stirring until the vegetable are tender.
  • Serve with bread, lahooh, sabaayad or even rice.

    cook it for about an hour still a little hard to chew

    Layla you could cook the meat before hand until it is nice and tender.
    The other thing is to ask your butcher, the best parts of meat that doesn’t need much of cooking, depending what they have for that day.
    You could also try with beef or goat.

    i tried boling the lamb before hand and it come perfect
    so tasty. i wanted to try the sabaayad but i don’t have plain flour could i use self rasing flour

    Layla I am glad that the suqaar worked for you, it usually come out well when you use the self raising flour, it is best when used the plain four.

    eid mubark i tried the sabaya it came out quite well i just can’t make it circal shape it was a bit crispy on the eaghes is that normal i wondering do know eid recipes like fancy rice if so i would be most greatful.

    sorry for the late reply, about the sabayad, I always end up square that is how i like it, but if you want it round you can
    roll the dough in to a round shape then roll it out and it should be round shape. I am not so sure why the edges are crispy
    maybe your griddle is too hot ?

    recipe tastes very very nice the thing is i never imade lentils
    before so i wasn’t sure how long to cook it could you please tell me how long to cook lentils?
    iam also going to try lamb liver could you please tell how long to cook lamb liver.

    Many thanks for your comments. After the lentil comes to a boil, reduce the heat and cook for 10 minutes. The lamb liver recipe, the liver cooks very fast, so you want to keep an eye for it, while stirring for about 5-10 minutes.
