sorry for the late reply, about the sabayad, I always end up square that is how i like it, but if you want it round you can 
roll the dough in to a round shape then roll it out and it should be round shape. I am not so sure why the edges are crispy
maybe your griddle is too hot ?

Layla you could cook the meat before hand until it is nice and tender.
The other thing is to ask your butcher, the best parts of meat that doesn&#039;t need much of cooking, depending what they have for that day. 
You could also try with beef or goat.
