			<content:encoded><![CDATA[<p>This one is my favorite  soup, made with chicken legs-tights boiled until almost falling from the bone, traditionally is used with lamb or goat or camel meat, but using chicken instead is even better at times, vegetable used here can also be varied according to your liking. </p>
<p>Ingredient:</p>
<ul>
<li>4 chicken legs-tights</li>
<li>1 tomato, cut in half</li>
<li>3 carrots, peeled</li>
<li>3 potatoes, peeled</li>
<li>1/2  head of cabbage, sliced</li>
<li>3 cloves of garlic, chopped</li>
<li>3 black peppercorns</li>
<li>1 teaspoon cumin seeds</li>
<li>5  cardamom pods, crushed</li>
<li>1 teaspoon coriander</li>
<li>1 teaspoon ginger</li>
<li>1-2 tablespoons coriander/cilantro leaves </li>
<li>salt to taste</li>
</ul>
<p>Directions:</p>
<p>Place the chicken in a in a large soup pan, cover with water, bring it to a boil.<br />
Skim the foam that rises to the top with a spoon.<br />
Boil for 15 minutes, then let simmer on a medium.<br />
Add tomatoes, potatoes,cabbage, carrots, garlic and the spices continue to cook for 30-40 minutes or until the Chicken is tender almost falling off from the bone.<br />
Garnish with more cilantro/coriander leaves.<br />
Serve with bead.</p>

			<content:encoded><![CDATA[<p>Oatmeal soup is thick and creamy mostly served during iftar, very filling it can stand on its own, and very satisfying <span id="more-1197"></span>any time of the day.</p>
<p>Ingredients:</p>
<ul>
<li>1 1/2 cups of oats</li>
<li> 6 cups of water</li>
<li>1/2 to 1 pound of meat</li>
<li>salt</li>
<li>pepper</li>
<li>1 small onion chopped</li>
<li>1 clove of garlic chopped</li>
<li>1 teaspoon cumin powder</li>
<li>1 teaspoon coriander powder</li>
<li> one lemon cut in half</li>
</ul>
<p>Directions:<br />
In a medium sauce pan heat the oil add the meat and brown, add the onion season with salt and pepper cook until the onions are translucent, add the garlic, cumin and coriander powder stir for few minutes.<br />
Add the oats and bring it to a boil reduce the heat and simmer while stirring occasionally about 30- 40 minutes. (make sure not to burn the soup.)<br />
Using a hand blender or in a blender blend the soup until smooth and creamy.<br />
Serve with lemon and sprinkle with some sugar and duqus (optional).</p>

<p>Ingredients:</p>
<ul>
<li>3 potatoes, diced</li>
<li>2 carrots, chopped</li>
<li>1 small onion, chopped</li>
<li>1 small tomato, chopped</li>
<li>2 cloves of garlic, minced</li>
<li>1 cup lentil</li>
<li>1 Magi cube</li>
<li>salt and pepper to taste</li>
<li>1 teaspoon cumin</li>
<li>1 teaspoon paprika/chili powder/</li>
<li>1 tablespoon chopped cilantro</li>
</ul>
<p>Directions:</p>
<ul>
<li>In a sauce pan on a medium heat, add the lentil and cover with water.</li>
<li>Bring it to a boil then simmer until the lentils are tender.</li>
<li>On a sauce pan add the onions and cook until brown add the potato and the carrot.</li>
<li>Cook for few minutes. Season with salt and pepper.</li>
<li>Add the garlic, tomato, cilantro and cook until tomatoes are tender.</li>
<li>Strir in the lentil, Maggi cube, cumin, paprika and cover with water.</li>
<li>Cook until the potatoes and the carrots are tender, add more water if needed.</li>
<li>Blend soup using a hand held blender or use a blender until pureed, or you can serve it as it is</li>

<p>Ingredient:</p>
<ul>
<li>3 medium potatoes</li>
<li>2 carrots</li>
<li>Half a head of cabbage</li>
<li>1 tomato, chopped</li>
<li>1 pound beef/lam</li>
<li> 1 small onion, chopped</li>
<li>2 cloves of garlic, chopped</li>
<li>2 table spoon cilantro, chopped</li>
<li>Half of green pepper, chopped</li>
<li>2 green onions, chopped</li>
<li>2 teaspoon coriander powder</li>
<li>1 green chili, seeded</li>
<li>Juice of half of a lemon</li>
<li>Salt and pepper, to taste</li>
</ul>
<p>Directions:</p>
<ul>
<li>In a large pot cook the beef and cover with water and the magi until the meat is tender.</li>
<li>Add the potatoes, carrots and the cabbage and cook for 10-15 minutes.</li>
<li>Add the rest of the vegetables and season with salt and pepper.<br />
Cook until the vegetables are tender</li>

<li>2 table spoon oil</li>
<li>2 cloves of garlic</li>
<li>1 table spoon ginger</li>
<li>1 medium onion</li>
<li>1 pound chicken</li>
<li>2 potatoes, chopped</li>
<li>2 carrots, chopped</li>
<li>2 tomatoes</li>
<li>1 can chickpea</li>
<li>1 chili</li>
<li>2 table spoon cilantro</li>
<li>juice of half a lemon</li>
<li>1 magi bouillon</li>
<li>1 teaspoon cumin</li>
<li>1 teaspoon turmeric</li>
<li>Salt and pepper to taste</li>
</ul>
<p>Directions:</p>
<ul>
<li>In a large saucepan, heat the oil on a medium heat, add the onion, garlic and the ginger cook until the onion is brown and softened, season with salt and pepper.</li>
<li>Add the spices and chicken continue to brown the chicken, and then add potatoes and the carrots.</li>
<li>Next add tomatoes cook few more minutes. Then add chickpea, chilies, cilantro, and lemon juice, simmer for few minutes.</li>
<li>Add the magi and some water continue to cook until the veggies and the chicken are cooked about 30-40 minutes add more lemon juice.</li>
<li>And serve with bread.</li>
