Cambaabur (ambaabur) : Eid Bread

Cambaabur is a Somali Eid bread, it is prepared more like lahooh with different ingredients, then fried on a skillet, sprinkled with sugar on top then served with yogurt. It is enjoyed as a breakfast item, mostly during Eid.

Ingredients
  1. 1 ½ cups all purpose flour
  2. ½ cup wheat flour
  3. ½ cup millet flour
  4. 3 cups water
  5. 1 ½ teaspoon yeast
  6. 1 ½ teaspoon sugar
  7. 1 teaspoon salt
  8. 1 small onion chopped
  9. 1 clove of garlic chopped
  10. 1/2 teaspoon to 1 teaspoon of turmeric
  11. 1 teaspoon fennel seeds (caraway)
  12. 1 teaspoon habba sauda (nigella seeds)
Instructions
  1. In a blender add the onion and garlic, cumin, turmeric and some water and blend until smooth paste.
  2. Add all the other ingredients to the blender and blend again until combined. It should be like a pancake batter.
  3. Cover the mixture and keep it in a warm place for about 4-6 hours or until it doubles in size.
  4. Scoop the batter by 1/4 cup on a fry pan with a little oil, sprinkle with custard sugar on top to taste. repeat this until you have finished all the batter.
  5. Serve with Yogurt.

    • You can find millet or sorghum flour from any indian grocery stores, or try your local natural food stores, or your local supermarket. depending where you live.
      You can also find online at Bobsredmill.com, Millet flour, or sorghum flour both will work in this recipe.
      if you cant find it is not a must really, you can add more plain flour instead.

      Thanks for pointing that out, you might need 1/2 to 1 teaspoon of turmeric. Start with 1/2 teaspoon and see if you like it or if it needs more then add more.

      You could make everything the day before with yeast and let it ferment in the fridge overnight,
      or make the same day with out the yeast instead with self raising flour only.

  • This food was put on Aljazeera article that Somalis serve it during Eid day. and i never heard of it.
    Mainly, we server Biscuit,halwa and tea before breakfast and liver or meat with their soup and bread (canjeera).
    even most Somalis who live in Somalia do not use yogurt.

  • Absolutely incredible Thank you. Also to those who have no idea about this dish, it is absolutely made every single Eid in Somalia mainly in Northern Somali and Djoubiti. My mom made it for us and now i enjoy doing the same for my kids. As we migrated to different parts of the world other Somalis have learned to enjoy it. We fry the top part with some sesame seed oil, butter or gee. It delicious.
