Ingredients
- 1 cup green lentils
- 2 cups water and more if needed
- 2 tablespoons oil
- 1 smalll onion chopped
- 2 cups baby spinach leaves
- 1 large tomato, chopped
- 1 teaspoon cumin
- 2 cloves garlic chopped
- fresh lemon juice
- salt,ground black pepper to taste
Instructions
- In a sauce pan bring water to a boil add the lentil,
- simmer until the lentils are tender about 20-30 minutes add more water if needed.
- Drain any excess water and set aside.
- Heat the oil in a large skillet over medium heat.
- Add the onion and cook, about 4-5 minutes until softened.
- Add the tomatoes, cumin and garlic and cook about few minutes,stir to combine.
- Stir in the cooked lentil and cook for 5- 10 more minutes.
- Add the spinach and cook until wilted.
- Season with lemon, salt and pepper and serve with lahooh.
