Brown lentils are the ultimate weekday comfort food, with their creamy texture and quick cook time. 

This simple dish is sautéed with onions and tomatoes, seasoned with cumin, and tossed with fresh spinach. It is bursting with flavor and tastes incredible scooped up with fresh lahooh.

Ingredients
  1. 1 cup green lentils
  2. 2 cups water and more if needed
  3. 2 tablespoons oil
  4. 1 smalll onion chopped
  5. 2 cups baby spinach leaves
  6. 1 large tomato, chopped
  7. 1 teaspoon cumin
  8. 2 cloves garlic chopped
  9. fresh lemon juice
  10. salt,ground black pepper to taste
Instructions
  1. In a sauce pan bring water to a boil add the lentil,
  2. simmer until the lentils are tender about 20-30 minutes add more water if needed.
  3. Drain any excess water and set aside.
  4. Heat the oil in a large skillet over medium heat.
  5. Add the onion and cook, about 4-5 minutes until softened.
  6. Add the tomatoes, cumin and garlic and cook about few minutes,stir to combine.
  7. Stir in the cooked lentil and cook for 5- 10 more minutes.
  8. Add the spinach and cook until wilted.
  9. Season with lemon, salt and pepper and serve with lahooh.
