Lentil Soup

A delicious warm lentil soup it is great for the family, add more lemon juice or a dollop of yogurt and it is a wonderful when served with bread.

Ingredients:

  • 3 potatoes, diced
  • 2 carrots, chopped
  • 1 small onion, chopped
  • 1 small tomato, chopped
  • 2 cloves of garlic, minced
  • 1 cup lentil
  • 1 Magi cube
  • salt and pepper to taste
  • 1 teaspoon cumin
  • 1 teaspoon paprika/chili powder/
  • 1 tablespoon chopped cilantro

Directions:

  • In a sauce pan on a medium heat, add the lentil and cover with water.
  • Bring it to a boil then simmer until the lentils are tender.
  • On a sauce pan add the onions and cook until brown add the potato and the carrot.
  • Cook for few minutes. Season with salt and pepper.
  • Add the garlic, tomato, cilantro and cook until tomatoes are tender.
  • Strir in the lentil, Maggi cube, cumin, paprika and cover with water.
  • Cook until the potatoes and the carrots are tender, add more water if needed.
  • Blend soup using a hand held blender or use a blender until pureed, or you can serve it as it is
