Spinach and Potato Frittata

This elegant frittata is made with potato and spinach then sprinkled with cheese it is cooked over the stove then transferred to the oven it is a delicious and ideal for breakfast.

Ingredients:

  • 3 potatoes, sliced 1/8 thick
  • 6 eggs beaten
  • 1 lb fresh spinach
  • 1 tomato, chopped
  • 1 clove of garlic minced
  • Salt and pepper to taste
  • About ½ cup shredded cheese
  • 3-4 tablespoon olive oil

Direction:

  • Wash and chop spinach finely, drain and place the spinach in a fry pan over medium heat. Stir for one minute until soft. Transfer the spinach to a colander and press out the moisture. Chop finely.
  • Sautee the onions on a large fry pan over medium heat until soft, add the garlic and stir. Add the potato and cook for few minutes add the tomato and season. Stir in the spinach.
  • Fold together the beaten eggs and the cheese and pour over the egg mixture and fold until just blended.
  • Transfer in the oven and bake until just set.
