Green Beans in Tomato Sauce

Green beans is the main ingredient used in this recipe and fresh tomatoes, the combination is great and can be eaten with many things, such as rice bread, pasta and the list is endless.

Ingredients:

  • 1 lb green beans, trimmed, cut in half
  • 2 garlic cloves, finely chopped
  • 4 tomatoes, chopped
  • 1 green chilli, seeded, chopped
  • 2 tablespoons cilantro/ coriander leaves, chopped
  • 1 tablespoon tomato paste
  • 1 teaspoon cumin powder
  • Salt and pepper
  • 1/4 cup oil

Directions:

Heat the oil in a large pan, add the onion and cook over medium heat until softened.
Add tomato paste, tomatoes, green chilli, and cilantro, cumin, season with salt and pepper. Cook until tomatoes are soft.
Add the beans and 1/2 cup of water,bring it to a boil then simmer on a medium heat until the beans are tender about 10-15 minutes.
Serve warm as a side dish.
