Sponge Cake

“Sponge Cake, also known as Victoria Sponge Cake, features two layers of light, airy cake filled with jam and heavy cream. A perfect treat to share at your next tea time gathering.”

Ingredients
  1. 2 cups cups allpurpose flour
  2. 2 cups sugar
  3. 1 cup softened butter
  4. 4 eggs
  5. 1 cup milk
  6. 2 1/2 teaspoons baking powder
  7. 1 teaspoon vanilla
  8. 6 tablespoons strawberry jam for spreading
  9. 1 cup heavy/double cream, whipped
  10. 2 tablespoon powdered/icing sugar
Instructions
  1. Grease two 9 inch 23 cm cake pans.
  2. Beat butter and the sugar until light and fluffy. Add the eggs on at the time.
  3. With a spatula add the flour and the milk alternating and mix until combined.
  4. Bake in a preheated oven 350/180 for 30-40minutes or until the tops are golden and a toothpick inserted comes out clean. let the cakes cool completely before spreading with the jam and whipped cream.
  5. Whip the cream to soft peaks.
  6. Spread bottom half of the cake with the the strawberry jam.
  7. Then spread cream on a top evenly.
  8. Using the other have of the cake sandwich it together and transfer it to a serving place.
  9. Dust with powdered/ icing sugar.
