Date Banana Loaf

I always have dates and banana around, the combination of these two stable ingredients in my kitchen makes great snack with tea or coffee, this recipe is ideal for using over ripe bananas the best.

Ingredients
  1. 1/3 cup unsalted butter
  2. 1/3 cup sugar
  3. 2 tablespoons honey
  4. 2 large eggs
  5. 3 ripe bananas
  6. 1/2 cup chopped dates
  7. 1 cup plain flour
  8. 1/2 cup wholemeal/wheat flour
  9. 11/2 teaspoons baking powder
  10. 1/2 cup Milk
  11. 1/2 teaspoon salt
Instructions
  1. Preheat the oven to 350f/80c
  2. Grease a loaf-pan.
  3. Whisk the butter, honey and sugar in a large bowl for 5 minutes.
  4. Add the eggs on at the time and mix.
  5. In a food processor puree the dates and banana, and add this to the bowl and mix in.
  6. Mix the flours, baking powder and salt and fold it it along with the milk.
  7. Spoon into the prepared loaf pan and level the top.
  8. Put it in the oven and bake for an 1 hour or until a tester inserted and comes out clean.
  9. Let it coll in the pan for 10 minutes before turning out.
