Lahooh and Lentil

Brown lentil have soft and creamy texture when cooked and they hold their shape, it only takes about 20 minutes to cook. Sauteed with onions and tomatoes spiced with cumin, then tossed with spinach. This simple dish bursting with flavors it so delicious with Lahooh.

Ingredients
  1. 1 cup green lentils
  2. 2 cups water and more if needed
  3. 2 tablespoons oil
  4. 1 smalll onion chopped
  5. 2 cups baby spinach leaves
  6. 1 large tomato, chopped
  7. 1 teaspoon cumin
  8. 2 cloves garlic chopped
  9. fresh lemon juice
  10. salt,ground black pepper to taste
Instructions
  1. In a sauce pan bring water to a boil add the lentil,
  2. simmer until the lentils are tender about 20-30 minutes add more water if needed.
  3. Drain any excess water and set aside.
  4. Heat the oil in a large skillet over medium heat.
  5. Add the onion and cook, about 4-5 minutes until softened.
  6. Add the tomatoes, cumin and garlic and cook about few minutes,stir to combine.
  7. Stir in the cooked lentil and cook for 5- 10 more minutes.
  8. Add the spinach and cook until wilted.
  9. Season with lemon, salt and pepper and serve with lahooh.

They introduced me to sambusa, Kac Kac, and Quraa and offered me some very delicious hot spiced tea! Ever since, I have wanted to know everything about delicious Somali foods! You have answered my question about what lentils are like so well and I can't wait to try this and lahooh!!! We have several wonderful markets down town where I can find a large variety of spices.
