Sweet Adzuki Beans : Digir

This dish features nutty, delicious sweet adzuki beans, full of fiber. Boiled until tender plain or cooked with rice since it cooks less time compared with the adzuki beans. Served with milk on the side and sesame oil for topping,  sweetened with honey or sugar. These beans are equally delicious in savory dishes too. You can purchase the dry beans in Asian markets or natural food stores.

Ingredients
  1. 2 cups adzuki bean
  2. salt
for serving
  1. sugar
  2. sesame oil
  3. Milk
Instructions
  1. Rinse the beans and soak with water and let it sit for overnight, to reduce cooking time.
  2. Drain the beans and rinse again , in a saucepan boil beans and water, bring to a boil over high heat.
  3. Reduce heat to medium to low, partially, or fully covered as long as it doesn't over follow, keep an eye on it, and cook 30-40 minutes.
  4. I you decide to add the rice you can add it in the last 10-15 minutes for the rice to be cooked.
  5. Continue to simmer until the rice is cooked.
  6. Serve with sugar and sesame oil and milk.
