This version of lohooh with eggs and cheese is another way of eating lahooh either in the morning as a breakfast or any time of the day as a snack. It is delicious and kids will love it.
Ingredients:
Directions:
Beet the eggs in a bowl then place all the vegetable and mix until combined, season with salt and pepper.
In a skillet on a medium heat drizzle little oil then place one lahooh on the skillet.
Pour the mixture over the lahooh covering most of it.
Sprinkle the cheese over it and cover with the other lahooh.
Leave it to cook until the bottom has a nice brown color and the eggs have set.
Drizzle with little oil and flip over to the other side, and cook until brown.

Lahooh is a Somali pancake-like bread similar to the Ethiopian injera. However, unlike the Ethiopian type, canjeero is smaller and thinner, so people eat quite a few of them at a time.

Lahooh is northern Somalia's anjeero. Instead of saying canjeero as they say in the south, in the north its lahooh so basically all you need is two canjeero.
